Carolina Marianna Minniti was born in the Bronx in New York City, NY to her Sicilian parents, Paulo Minniti and Concheta Conte.  The birthdate was on June 26, 1923. This wonderful woman was the middle child of three sisters, Theresa and Katheryn, better known as the three roses or the Minniti girls. A modern New York City girl, Carol, was always wanted to sing and dance. The floors would vibrate on the fifth story of her apartment building as she tap danced from room to room.

Being the times they were, Carol went to a vocational school where she learned the fine art of sewing.  As years passed she sewed everything from parachutes for WWII to men’s tailored shirts. Being a seamstress was her trade as she did piecework in the Garment Districts in New York and New Jersey.

During the 1940’s wedding crashing was trending by the gentlemen in the Italian community. On one of those occasions is where my mother met the love of her life, Tony Poulos.  On October 25th 1942 this young couple was wed. The Poulos family emerged. Life was good “Dolce Vida”/the Sweet Life!

Their first child, Luca Anthony was born and their second child, Lorraine, came along almost ten years later.  They moved from the city to Hackensack and finally up to the country in Scenic Lakes in northern New Jersey.  Her son, Anthony and Daughter-in-law, Gail had their first grandchild, Marie, with whom they cherished.  About seven years later Lorraine, her daughter, met a Colorado man, Tomas Gonzales.  After many visits, back and forth to Colorado in their trailer, their second granddaughter, Natalia, was born. Three years later the third granddaughter, Tezia, came into this world.

Her faith guided her life as she lived life as Jesus would have wanted.  She gladly served 18 years singing in the Queen of Peace choir bringing the joy of songs and hymns to all every Sunday.

Carol lived her life positively, sharing her love and joy with everyone.  Her smile and laughter was contagious and will be forever missed.

A funeral mass celebrating her life will be held at 3 PM on Friday, October 28, 2016, at St. John the Baptist Catholic Church in Dunnellon, with Rev. Jean Desire officiating.  The family will receive friends from 2 PM until service time.

In lieu of flowers, memorial contributions may be made to the family to assist in covering final expenses.
